Oatmeal and blueberry cookies

Recipe suitable for diets: Dialysis, CKD without dialysis, vegetarian, diabetes, low protein.
Ingredients:

  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/4 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1.5 ounces Beneprotein (protein powder)
  • 1 cup no-sugar-added applesauce
  • 3 cups rolled oats
  • 1/2 cup dried cranberries

Instructions:

  1. Let the butter soften at room temperature. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream the butter and sugar using an electric mixer. Add the egg, flour, protein powder, vanilla extract, cinnamon, and salt. Mix until well combined.
  3. Stir in the applesauce, then fold in the oats and dried cranberries.
  4. Drop 1/4 cup scoops of dough onto the prepared baking sheet. Flatten each cookie slightly.
  5. Bake for 12–14 minutes or until the cookies are golden brown but still soft.
  6. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
